Blood Sugar–Balancing Veggie Scramble

A savory meal to stabilize energy and support metabolism.


Ingredients:

  • 2 whole eggs + 2 egg whites (or tofu if preferred)

  • ½ cup chopped zucchini

  • ¼ cup chopped red bell pepper

  • ¼ cup chopped green onion

  • 1 handful arugula or spinach

  • ½ tsp turmeric + pinch of black pepper

  • 1 tsp olive oil or avocado oil


Instructions:

  1. Heat oil in a skillet, sauté veggies 3–4 minutes.

  2. Add eggs and scramble gently until cooked through.

  3. Stir in turmeric and pepper. Serve with avocado slices or a spoon of sauerkraut.
