Blood Sugar–Balancing Veggie Scramble

A savory meal to stabilize energy and support metabolism.
Ingredients:
2 whole eggs + 2 egg whites (or tofu if preferred)
½ cup chopped zucchini
¼ cup chopped red bell pepper
¼ cup chopped green onion
1 handful arugula or spinach
½ tsp turmeric + pinch of black pepper
1 tsp olive oil or avocado oil
Instructions:
Heat oil in a skillet, sauté veggies 3–4 minutes.
Add eggs and scramble gently until cooked through.
Stir in turmeric and pepper. Serve with avocado slices or a spoon of sauerkraut.
