If you are maintaining a soy-free diet, coconut aminos are a great alternative or you can just add salt. Fresh baby bok choy works best in this recipe - it just tastes like spring.
Whisk together olive oil, sesame oil, vinegar, sugar and tamari soy sauce. Combine bok choy, green onions, carrots, and chicken in a medium size serving bowl.
Toss with prepared dressing, and serve.
**For a vegan version leave oil the chicken and use sugar or agave instead of honey.
